Ingredients

  • 0.75 oz elderflower liqueur
  • 0.5 oz freshly squeezed lemon juice
  • 0.5 oz honey syrup (1:1 honey and hot water)
  • 2 oz soda water (chilled)
  • Ice
  • Garnish: edible flowers, lemon twist, or a cucumber ribbon

Directions

  1. Chill your glass — A coupe or Collins glass works beautifully. Pop it in the freezer or fill with ice water while you prep.
  2. Mix the base — In a shaker filled with ice, combine gin, elderflower liqueur, lemon juice, and honey syrup. Shake vigorously for 10–15 seconds until the shaker feels icy cold.
  3. Strain & pour — Discard the ice from your glass and strain the mixture into it.
  4. Top with fizz — Gently top with soda water. Give it a gentle stir to incorporate without flattening the bubbles.
  5. Garnish — Add a delicate edible flower on top, a twist of lemon, or a cucumber ribbon for that extra spring flair.

Tips & Variations

  • No elderflower liqueur? Try a splash of lavender or rose syrup for a floral twist.
  • Want a mocktail version? Sub the elderflower liqueur for a splash of elderflower syrup and add more soda water in place of the gin.
